1.Place milk, cream & chocolate into a saucepan. Heat until chocolate has melted, mixing occasionally with a whisk. Add peppermint essence, whisk to combine.
- 375 ml full fat milk
- 125 ml thickened cream
- 120 g dark chocolate
- 1 drop mint oil extract
2.Meanwhile beat egg yolks & sugar into a bowl until pale and thick.
- 5 egg yolks
- 40 g castor sugar
3.Whisk hot milk mixture into the egg mixture. Return mixture to saucepan.
4.Stir mixture over low heat until mixture in a thin custard consistency. Set mixture aside to cool.
5.Pour cooled mixture into Gelato Expert. Select Gelato function. Add extra chocolate after approx. 20min. Serves 6.
